Mine are canned blackeyed peas ( " fresh-shelled " preferred, but I'll do with " cooked from dry " blackeyes as well), and canned cooked hominy. I have purchased dried hominy and have used it a couple of times--it's okay, but I'm mostly used to opening up a can of white or yellow hominy. Oh yes, and I like canned " butterbeans " , mostly because I can't find them dried and in bulk around here. We have " large lima beans " dried, but not the big, starchy (almost remind me of potatoes!) butter-beans. One of my favorite ways to eat these canned vegetables is to mix them together. I have had (canned) blackeyed peas and (canned) hominy mixed together many times. Come to think of it, I think that mixing butter-beans in with these other 2 would also be really good! I usually add some sauteed onion and a bit of hickory-smoke flavored salt (or liquid smoke and seasoned salt) to these mixed-together foods. If there is a GOOD " hickory smoke " or smoky-sweet flavored vegetarian " sausage " , " ham " or " bacon " -flavored food product, I'd say that might be good chopped up and stirred in with it, too. Anyway, I think the combination of flavors and textures of these 2--blackeyed peas and hominy is interesting and tasty together.
