I haven't glanced through it completely yet, but I have soooo many recipes marked, I won't know where to begin. So far, many of them look simple, in ingredients and preparation.....I still consider myself a flexitarian, very close to complete vegetarian, and I am still finding a lot of recipes in this book that look uncomplicated and will easily fit in my menus. I'm excited to start trying them out.....I always have to look them through from front to back before I start trying them. Am interested in favorite recipes from others using this book....someone mentioned the chickpea cutlets, which is what prompted me to buy the book. Enjoy the day! Guest guest Posted July 5, 2009 Report Share Posted July 5, 2009 Start with the chickpea cutlets and the spinach lasagna, but use the cashew tofu ricotta recipe (page 206) instead other tofu ricotta recipe. It's so good! I also added many more vegetables to the lasagna--sliced zucchini, shredded Brussels sprouts, anything really. The chickpea cutlets come looking exactly like the photo in the book. I use the baking method, which apparently gives it a meatier texture. Also, let us know if you make something from the book that you think is outstanding.
