I have another question. My mother had said that she had to pick just the small

leaves.

Is this true or was my grandmother just picky?

This recipe will turn you into a dandelion lover.  You can add Bac'O bits at the

end if you desire.

Warm Dandelion Greens Salad for 2

 

3/4 pound dandelion leaves

2 tablespoons olive oil

1 tablespoon red wine vinegar

1/2 teaspoon salt

freshly ground pepper to taste

1 slice French or Italian bread, cubed

2 tablespoons red wine vinegar

1 hard boiled egg, crumbled

 

Wash the greens and tear into small pieces. Put into a warmed salad bowl with

the oil and vinegar. Sprinkle with salt and pepper. Toss lightly.

Heat a little oil and fry bread cubes  until cubes are golden. Add cubes onto

the greens. Toss quickly.

Put the vinegar into the pan and heat rapidly. When it is bubbling fiercely,

pour onto the greens and toss. Serve immediately with a sprinkling of the

crumbled egg on top. Serves 2.

My grandmother used to pick the dandelion greens from the yard and make salad

for my grandfather (we never ate it because it was too bitter).  I remember her

saying that the smaller leaves were more tender.  I thought it was very strange

as a kid the thought of eating weeds from the grass but it's really no different

from the garden lol.

I have eaten since childhood when my Gran picked them from her garden. I taste

no difference in the size of the leaves. They are all bitter lol

Now that you mention this, I brought in five baby dandelion leaves in

April for the guinea pig, but I ate one and DH ate one or two and

they were not as bad as we thought they'd be. We did let the pigger

have the last few leaves and the rest of the season's as well. (I

planted them for him in safe soil, not knowing I might like them.)

This spring, I may have to make sure I get a share for myself. :-)
