I would love to hear your experience and learn your process. I am looking for a local source for Nigari for the coagulation catalyst. I am located in the South Bay Area by San Jose CA. Anyone know where I can score this stuff at? I scouted all the local health food stores around here and many in Santa Cruz - no luck yet. Hitting the Japanese and other such Asian markets this week. I found Calcium Sulphate at a brewer store here in Campbell. I read that it's not as good as Nigari (it's apparently bitter)but works as a coagulator catalyst.
