They looked too simple to be good, but they are GREAT! They are even better the next day. I made my own salsa to go into them (simple) and I can’t wait to pass the recipe on. Notes: I drained and froze the tofu first. Thawed it, then squeezed the liquid out by wrapping the tofu in a towel and placing a saucepan with the heavy rock in it on the top! It made the tofu a wonderful crumbly texture. The salsa I made to go into the tacos is very easy: 3 med tomatoes ½ a yellow pepper 1 scallions 1 crushed garlic 1 chopped jalapeño or one red pepper (the long ones that look like my pepper Christmas lights!). When I make the salsa with the red pepper I don’t chop it, I just open it, scoop out the seeds and add it for flavor. I don’t do really hot!! Cilantro to taste, chopped Add the juice of one lime A splash of apple cider vinegar That’s it…let set for a while, it’ wonderful in everything. I even had it in a grilled cheese sandwich last week and it was wonderful. Jane Linda McCartney’s Magical Tacos Ingredients * 1/2 onion <http://www.recipezaar.com/library/getentry.zsp?id=148> , chopped * 2 cloves garlic <http://www.recipezaar.com/library/getentry.zsp?id=165> , crushed * 1 small bell pepper <http://www.recipezaar.com/library/getentry.zsp?id=150> , diced * 1 tablespoon vegetable oil * 1/2 lb firm tofu <http://www.recipezaar.com/library/getentry.zsp?id=108> , crumbled * 1 tablespoon chili <http://www.recipezaar.com/library/getentry.zsp?id=719> powder * 1/4 teaspoon ground <http://www.recipezaar.com/library/getentry.zsp?id=20> cumin * 1/4 teaspoon dried <http://www.recipezaar.com/library/getentry.zsp?id=334> oregano * 1 tablespoon soy sauce <http://www.recipezaar.com/library/getentry.zsp?id=473> * 6 corn <http://www.recipezaar.com/library/getentry.zsp?id=657> tortillas or ready-to-eat taco shells * 1 (8 ounce) can tomato <http://www.recipezaar.com/library/getentry.zsp?id=153> sauce Directions 1. Saute the onion, garlic and bell pepper in oil for 2 to 3 minutes. 2. Add tofu, chili powder, cumin, oregano and soy sauce. 3. Cook for 3 minutes. 4. Add tomato sauce and simmer over low heat until mixture is fairly dry. 5. Heat tortillas in a heavy, ungreased skillet, turning each from side to side until soft and pliable (omit this step if using taco shells). 6. Place a small amount of the tofu mixture in the center, fold the tortillas in half, and remove from heat. 7.
