Guest guest Posted March 5, 2009 Report Share Posted March 5, 2009 Hello, Vegetarian times has a lovely recips for vegan chocolate cupcakes. I have made them a number of times but never as a cake. I suppose it would work. You could always take your favourite chocolate cake recipe and remove the eggs with egg replacer. The butter can be substituted with avacado and/or prunes. I don't know the exact measurements but I suspect if you do some searching on line you will find some. I experimented with banana muffins the other day. I used egg replacer for the eggs (Kingsmill) and a combo of olive oil and avacado for the butter. They were fantastic (a slight green tinge but no one noticed). Good luck.
