Tlt (Tofu, Lettuce And Tomato Sandwich)

olive oil spray

1 tbsp Dijon mustard

1 tablespoon soy sauce

1 pack tofu -- cut into pieces and patted dry

1 wheat free pitta bread

lettuce

tomato

 

Preheat oven to 250C/475F/Gas 9 and spray a baking tray with olive oil.

 

Combine mustard and soy sauce in a bowl. Place tofu on prepared baking

sheet. Spread half the mustard on one side of the tofu and half on the

other side and bake for 20 minutes.

 

Fill a wheat free pitta with the tofu, plus lettuce and tomato.
