Hello Everyone,

 

Thank you for allowing me into the group; I am the only " rabbit food "

person in my house so I appreciate a connection with like minded

people. I am retired, and began vegetarianism about 10 or more years

ago and am now working toward raw. I have an eclectic background so

tend to be fairly tolerant of other people and our varied viewpoints

on most issues. I look forward to sharing and learning.

 

My interest began by feeling vegetarianism is healthier, and then of

course learned about the treatment of animals on factory farms and the

" green " issues as well.

 

My appetite has diminished with age and I usually do not go with the 3

meals a day routine. One recipe I would like to share that I find

easy to make, easy to keep for about 3 days and easy to vary is one I

got from whfoods.org. It is called, 15 Minute Black Bean Salad: 1 15

oz can black beans, drained, combined with 1 cup frozen corn, thawed,

8 cherry tomatoes, quartered and 1/2 cup minced onion, 2 medium garlic

minced, 1/2 cup diced red bell pepper and 1/4 cup chopped fresh

cilantro. Drizzle with 2 TB extra virgin olive oil and 3 TB fresh

lemon juice, salt & pepper to taste.

 

It is easy to vary; I like to add some cubed fresh avocado and

sometimes finely chopped greens, like romaine lettuce. I like onion,

so I sometimes slice green onion into it also.
