Guest guest Posted January 19, 2009 Report Share Posted January 19, 2009 I made bars today (yesterday actually) out of oats, brown sugar, and flour for the top and bottom and boiled up the fruit and nuts until it was thick. This was the filling. They are delicious. I will be bringing them to Senior Citizens today. Thanks!! My mom went to one of these on Sunday and had a great time. These are such good ideas. Seniors can sometimes feel very isolated and really enjoy the group get togehters, for fun, talk, potluck meals, special speakers, game, etc. They are a very good thing. Guest guest Posted January 20, 2009 Report Share Posted January 20, 2009 I took a cup of the nut and fruit mix (almonds, raisins, cranberries, figs, etc.) and combined it with a cup of water and 1/4 cup of brown sugar. I boiled them until thick, about 8 minutes. I got a 9 x 9 inch glass dish greased with spray olive oil and preheated the oven to 350. I then took 1 cup of whole wheat flour, a cup of oatmeal, 1/2 cup of butter, and 1/2 cup of brown sugar. I combined this until it looked like crumbs by using a pastry blender. I saved back a cup of this mixture and put the rest of the mixture into the dish. I pressed it into the dish, making sure of pressing some into the corners. I covered this with the fruit mixture. Then I covered this with the remaining cup of the crumb mixture. Bake for 30 minutes. Make sure the fruit and nut mixture cools at least 30 minutes before using it. It will thicken up some.
