I am looking for a recipe for faux chicken. I have two cook books that are awesome: The Garden of Vegan, and How It All Vegan. They have recipes that utilize home-made wheat gluten to make faux fried chicken. I am a really good cook, but this stuff is rubbery and tough! It doesn't remind me of chicken in the slightest. The flavoring is great though, it utilizes a ton of thyme, a bit of tamari, and just a great blend of herbs, but the texture is horrific!
