Guest guest Posted July 3, 2009 Report Share Posted July 3, 2009 My husband (who is not veg) loves the frozen chic type patties (morningstar brand etc), mayo, cheese, lettuce etc etc, and I know there are nuggets and other types. Check out the quorn products in the frozen section as well. I used the soy type burgers at first, but homemade are SO much better! Check out the files - it can be overwhelming (it sure is for me, still!), I started with the ones with the fewest ingredients, more of a chance for success. I love making black bean burgers (we just had a thread on them last weekend) and again, hubby even liked them! And they freeze well so you can have some on hand. Guest guest Posted July 3, 2009 Report Share Posted July 3, 2009 For convenience food (especially for kids): Morningstar Farms, Boca (my fav for soy burgers, the flame-grilled variety), Quorn, Worthington (best veggie hot dogs) are all pretty good stuff for burgers and chicken-substitutes. Quorn is my favorite overall for their chik'n substitutes, but Morningstar Farms has GREAT veggie corn dogs (but not hot dogs). They also have " steak strips " which I tried the other night and just couldn't handle the texture -- kind of like fatty meat, ick! I like TVP tacos better than any of the frozen or refrigerated grounds. That's the only thing I've done with TVP so far, but several people on this list use TVP in a lot of stuff. TVP is cheap, especially compared to the already-made meat substitutes. (I want to try other ways of flavoring it, but I'm just loving my tacos right now!) Audrey S. I really enjoy quorn but my hubby and daughter only tolerate it once in a great while (in a stirfy, I've added tofu this way too). I really like it with pasta, broccoli, mushrooms, olive oil, garlic etc but they think too much about the texture....but they DO try! I used TVP for the first time in a sauce for stuffed shells, my family didn't know. Then I tried making meetballs with it another time (to have in sauce with pasta), again, they had no clue! I'm going to try TVP next in chili or tacos, it seems to go over well in tomato easily for them, as long as I don't TELL them (then they start THINKING about it, instead of just eating!). I've got some recipes picked out I want to try, just wondering if anyone has any favorites (TNT) using it in something OTHER than a tomato sauce. And did I see on this list a while back that Taco Bell uses TVP in their burritos etc? Guest guest Posted July 4, 2009 Report Share Posted July 4, 2009 Veganomican's Chickpea Cutlets recipe (outstanding recipe) makes great chickpea nuggets. I think kids would love them. I dip them in raspberry chipotle sauce that I buy at Costco. Here's the recipe. I use the baking method. Chickpea Cutlets (from Veganomicon) INGREDIENTS: 1 c. chickpeas 2 T. olive oil 1/2 c. vital wheat gluten 1/2 c. plain breadcrumbs 1/4 c. vegetable broth or water 2 T. soy sauce 2 garlic cloves , pressed or grated 1/2 t. lemon zest 1/2 t. dried thyme 1/2 t. Hungarian paprika 1/4 t. dried rubbed sage to taste olive oil , for pan frying or baking DIRECTIONS Mash the chickpeas and oil together until no whole chickpeas remain. Add remaining ingredients and knead for 3 minutes until strings of gluten have formed. Preheat large nonstick skillet over medium heat. Divide dough into four equal pieces. Flatten each piece and stretch to roughly 4 " x 6 " PAN-FRYING: Add a thin layer of olive oil to to the pan. Place cutlets in the pan and cook on each side for 6 to 7 minute They are ready when lightly brown and firm to the touch. BAKING: Preheat oven to 375°F, and lightly oil baking sheet. Brush both sides of each patty with olive oil, place on baking sheet, and bake for 20 minutes. Flip patties and bake another 8 to 10 minutes until firm and golden brown. I want a cookbook that has great stuff where my family wont noticed Im taking them off of dairy. I really really want to go more of the vegan route but my husband thinks Im overly sentstive to plight of the animals and thinks organic and cruelty free is our best bet. You might do better with Nava Atlas " Gourmet 5 Ingredient Vegetarian "  Cookbook right now. Nothing worse than spending money on a cookbook you won't use.
