Spice Cake sweetened with Agave

Spice Cake

 

2 1/2 cups whole wheat pastry flour

1 tsp. salt

1 1/2 tsp. cinnamon

2 1/2 tsp. baking powder

1 1/2 tsp. cloves

1 tsp. nutmeg

Stir together in a large bowl.

 

1 1/2 cups agave

2 tsp. vanilla

2 cups ground carrots or zucchini

3 eggs, beaten

1/4 cup milk (or soy milk)

3/4 cup butter or margarine

Mix all together in a separate bowl and beat for 3 minutes.

 

Add wet ingredients to dry ingredients and stir until completely

mixed.

 

Bake at 350 degrees in two 9 " oiled cake pans for 35 minutes or one

9 " X 13 " oiled pan for 45 minutes. Cool and frost if desired.
