i used both pine nuts and choppped walnuts - really good

 

i mixed the little bit of leftovers with some chick peas and extra spice and

made a nice dip/sandwich spread

CROCKPOT BARLEY CASSEROLE

Servings: 4

 

This delicious and healthy crockpot recipe can be

served as a vegetarian main dish or a side dish.

 

1 (14 oz.) can ready to serve vegetable broth

1 1/2 cups eight vegetable juice

1 cup uncooked pearl barley

1 cup chopped celery

1 green or red bell pepper, chopped

1 onion, chopped

2 cloves garlic, minced

1/8 tsp. white pepper

TO SERVE:

1/4 cup toasted pine nuts or chopped walnuts

 

Combine all ingredients except pine nuts in a 3-4

quart slow cooker.

 

Cover and cook on low for 6-8 hours until barley and

vegetables are tender.

 

Sprinkle with nuts just before serving.
