I'm not vegetarian so I am still stuck on meat as the main dish but I would truly love to find more options. I was raised in the midwest, where beef is always, always, " what's for dinner " -- so I understand where you're coming from. For me, mushrooms have taken the place of meat in a lot of dishes. They have a texture that is similar, and for me, mushroooms are similarly filling. Any entree that combines beans and rice is as filling (if not more so) than meat. I also started out making a lot of the same dishes that my mom made while I was growing up, and subbed Quorn chik'n tenders for real chicken, Quorn or soy grounds for ground beef, etc. After doing that for a while, I have started to branch out to meals that do not include meat substitutes, though I still enjoy and eat the meat substitutes. Even if you're just interested in eating vegetarian for health reasons, the meat substitutes have much, much less fat and cholesterol (and some have none, if they use only egg whites as binders) -- and some have protein amounts comparable to meat, too. Check out the meat substitutes folder, or take a look at your own casserole and soup recipes that contain meat, and see how you can adapt them. Hope this helps! Audrey S. Casseroles, loaves, Vegetable Pot Pie, soups, bean recipes, quiches, stuffings/dressings, pasta dishes, Indian dishes, Mexican dishes, etc. I use meat subsitutes, like Worthington Fri-chik, Worthington Vegetarian burger, Worthington Choplets, Worthington Tender Bits, Worthington Swiss Stake in many of my recipes. Check out our substitutes for meat folder recipes as well as all the catagories of recipes from our files as I mentioned above. Don't miss the many sub folders within each catagory of recipes, as there are load more recipes in those. There are tons of wonderful recipes to use as a main dish. %2ARecipes/ Don't miss menu ideas in there. I've got some menu's that we enjoy.
