I made one yesterday and while it's tasty and I can use it as sloppy joes, or fry them (I like the outside a little crispy) I really wanted to be able to slice it. Are you checking to see if the mix is too wet? Are you using a large enough loaf pan so the moisture in the center is cooking up? I often bake loaves in casserole dishes to make sure it gets done all the way in the center and set up nice. Guest guest Posted March 16, 2009 Report Share Posted March 16, 2009 I have yet to have a failure with a lentil loaf. It is one of my favourite foods. I pack it tightly into the loaf pan so there are no air bubbles. I do find that I have to cook it a bit longer than the recipe calls for. I cool it completely before I slice it. I think it might be better sliced after it has been refrigerated overnight. That's usually what I am doing. I spend one morning a week in the kitchen, refrigerate everything and then the next morning, I slice/cut etc into serving size portions, wrap in waxed paper, freeze overnight and then on the 3rd day, I vacuum bag the portions. Since DH and I are usually eating different foods, it's easier to do it this way. I'm having lentil loaf while he is having meatless loaf. Guest guest Posted March 16, 2009 Report Share Posted March 16, 2009 I did cook it for longer and while the edges firmed up, the center was mush, maybe it WAS too wet, it seemed OK but I guess I'm just not familar with what it should look like in order to be " not too wet " ! I'll try again in a shorter or wider (casserole) dish as someone else suggested so hopefully the center will cook. And I'll try leaving it in the pan after and/or refrigerating it before slicing (hopefully!). For now I've got leftovers I can heat up or freeze, I'll try again at a later date (and try something different in the meantime! I have more luck with stirfry and casserole dishes!). Thanks!
