Guest guest Posted January 14, 2009 Report Share Posted January 14, 2009 I can tell you that my husband would say, homemade vegetable lasagna. A mildly spiced Indian meal would be my choice. A nut/grain/mushroom loaf with a mushroom gravy over it is also good. Sauted asparagus with garlic, roasted potatoes with rosemary and coarse salt for seasoning are very good. Some multigrain rolls or garlic bread made on some wheat french bread is also a nice accompliment for this meal. Of course you must both eat the garlic for it to stay romantic. LOL For dessert, we love a trifle, cheesecake with fresh rasberries/blueberries/strawberries/manjo slices, chocolate fudge cake for something like this. Fresh strawberries with whipping cream is also delicious. But of course I've not found a dessert I'm don't like, minus alcohol flavored ones which I don't eat. Good question. The vegetarian menu consisted of: Soup Course: Butternut squash soup with maple cream sprinkled with cashew & pineapple pieces Salad: Arugula salad with roasted baby beets sprinkled with chopped pistachios, drizzled with balsamic vinegar and oil. Accompanied by cream cheese toast bites Main entree: Artichoke with tomato and caper sauce Leek & shitake mushroom tart with grilled asparagus Cauliflower and brussel sprouts with almonds in creamy sauce Dessert: Mini cream puffs (maple, vanilla, huckleberry and mocha flavors) It was lovely! Very elegant and I felt oh so pampered. Definitely not a night to worry about calories. Now this year, with money being tight, we may have chickpea cutlets with red wine roux at home.
