We never had cooked spinach growing up because my mom hated it -- just ate it raw in salads. I found out as an adult that I really like cooked spinach if it's in something else. My favorite: spinach and mushroom quesadillas! Mmmm! My grandma doesn't like broccoli, either -- her father never liked it so they were never forced to eat it! My mom likes broccoli, but I don't, it tastes horribly bitter to me. Audrey S. Guest guest Posted January 15, 2009 Report Share Posted January 15, 2009 I grew up hating it as well, but about 10 years ago I had it prepared properly and I really really liked it. My favorite way to eat it is in spinach dip (not the best, I know), but I like it raw, steamed and wilted with garlic, onions, tomatoes (any combination), and frozen chopped is great in mac-n-cheese. I have heard that iron absorbsion is increased with vitamin c and caratenoids (sp?), so eat your spinach with a sweet potato or carrots. I have started making and buying green juice (mixing half homemade with half store bought) I used OJ in mine, in hopes that it will help. Best wishes on your journey to better your eating habits. I swear that cheese saved me, as I was always forced to eat my veggies (raw green beans always ended up half chewed, swallowed, and I gagged quite a few times), and iceburg salad was the most common veggie on my dinner plate for many years. Adding a cheese/cheese sauce helped me get a taste for veggies, then I lessened and lessened the cheese. Now I can enjoy flavors and play with spices. It has become very creative for me, and even failures in the kitchen can be yummy (or keeping veggie burgers on back up can be a good treat!
