Guest guest Posted May 8, 2009 Report Share Posted May 8, 2009 I've heard that eggplant is very bitter. My daughter, on the other hand, tells me she loves eggplant parmesan. Is there something in the way it's prepared that changes the taste? I was thinking of trying the recipe below (an adaptation of another recipe I have), does it sounds like it would be good? Oven Fried Eggplant Parmesan corn flakes, crushed parmesan cheese, grated egg substitute (about 1/2 cup) dijon mustard (1/4 cup) eggplant, sliced lengthwise low-fat buttermilk (2 cups) hot sauce (couple of dashes) olive oil spray cooked whole wheat angel hair pasta marinara sauce, heated Heat oven to 350 degrees. Soak eggplant slices in buttermilk and hot sauce mixture 2 hours. Mix egg substitute with dijon in a bowl. Combine crushed corn flakes and grated parmesan cheese on plate. Remove eggplant from buttermilk mixture, and drain. Dip eggplant in egg substitute mixture, both sides. Coat with corn flake/cheese mixture. Place on cooling racks on baking sheet.
