My daughter made pasta, with left over pesto she made the other day and

some of roasted veggies we had left from Sunday.

We had Quick brown rice, fried tofu in sesame oil and sesame seeds, and frozen

green peas with a few squirts of aminos in the rice and a couple shakes of

garlic salt into the tofu and peas.

We had a very simple dinner tonight--steamed new potatoes with dill,

snowpeas, and cantaloupe for dessert. I love this time of year when

everything is so fresh and perfect! Peace, Mo

We had leftovers - a tofu and veggie (water chestnuts, pea pods, bok choy,

yellow squash, mushrooms, white sauce) dish from the Chinese restaurant; veggie

fried rice; leftover enchiladas (I made the sauce from the files!) with

mushrooms, onions, cheese, beans - I might try them next time with quorn or

crumbles added, my family still isn't totally veg and lefover peas and carrots.

Nothing made new but I like using up leftovers, I really hate throwing food

away!

Oh, and I had chickpea salad (ala mock tuna or egg salad spread) on toast for

lunch (there was a thread about that) - I did add some seaweed, it was yummy!

What a good question, it sure prompted a flood of tasty and seasonal recipes

that I plan to try, including the pattypan saute and the feijoada....

 

It will be an if then this .... and if not then that... type of dinner tonight.

 

If sweetie made pizza crust, then we will have a pizza. It will include some

baby summer squash (the patty pan, straight yellow and a couple of C. pepo

mongrels that volunteered in the corn patch); a couple of ichiban type eggplants

that look large enough to pick (the long slender type); some chard that still

needs to be picked as well, and a quick tomato sauce that I will make out of

some frozen tomatoes that came from a commercial job (sautee in olive oil,

garlic, tomato, salt and basil). Will add some asiago and goat cheese on top,

and some olives. I even have some peppers in the freezer that were grilled and

peeled...this is making me hungry.

 

If there is no pizza dough, then it is a repeat of last night. Tacos made with

some veggie 'not meat' I have in the freezer that came out too spicy, so I added

cumin in olive oil, sauteed onions and minced baby summer squash. Now it tastes

like taco filling. Grate some cheese, mince some fresh garden onions and garden

lettuce. Warm up the corn tortillas, start with the veggie not meat, add the

rest of the ingredients to taste, roll and eat. This is actually very tasty,

but we have had it the last couple of dinners so I hope he makes the pizza

crust.

Yesterday I made some very mediocre and rather flavourless vegeburgers, which

was very disappointing. Tonight I improved one by frying it in basil-infused

olive oil (instead of baking it) and served it with pasta and a tomato and

mushroom sauce with crumbled basil tofu and some pesto.

 

That's 2 down and another 6 to go, so I shall need to find more interesting and

flavourful sauces to serve them with.
