I've found that if I oven roast potatoes, carrots, parsnips and onions and then add them to the gravy (which also profits from the liquid from the baking pan) all the flavors are richer. I also oven roast vegetables before simmering them to make vegetable stock. Thanks again for sharing the recipes.
