Just make sure you don't substitute Red lentils for the Brown or Green lentils, because the red ones cook up into a puree and the Green and brown ones retain their shape. Guest guest Posted May 1, 2009 Report Share Posted May 1, 2009 Hi Carol, Neat thing about lentils is that they cook very well right along with any kind of rice you make, whether in a pot, crock pot or a fancy cooker. Just measure them the same as rice, right along with the rice, and add the same amount of water too, usually a little less than two times their measure. This lets you have a complete protein meal and more nutrition for no more trouble than making a pot of rice. Also if you are buying lentils on a regular basis, you can substitute them into a soy milk machine, instead of soy beans, to make a thick non-fat milk that sets to a wonderful pudding in the fridge -- it makes the best veggie yogurt (just add a little sugar and salt then ferment with a yogurt culture), or to make pudding just blend in some bananas or other fruits with chocolate syrup or vanilla.
