Guest guest Posted January 10, 2009 Report Share Posted January 10, 2009 Ingredients: Sweet potatoes Figs Soft goat cheese Extra virgin olive oil Toasted sesame oil Unsalted butter Sea Salt Pepper Preheat oven to 325. Per serving: 1] Rub sweet potato skin with extra virgin olive oil & salt. Place in ceramic dish [or whatever dish you prefer] Bake potato for approximately 45 minutes, depending on size. 2] Chop figs into tiny pieces, or use a food processor. Don't crush them. Tiny bits 'o' fig is the object. In a small sauce pan, saute the fig bits in toasted sesame oil, or any good oil. Set the fruit aside and let cool to room temperature. In a cold bowl, gently mix the fig bits & goat cheese with a fork. When the potatoes are finished, slice in half. Place a pat of unsalted butter, goat cheese/fig combo, inside the potato & close it back up. In 3 minutes or so, open the potato & mash. Add salt & pepper to taste. Enjoy. It's a winter thing.
