Hey Bev,

your salad sounds yummy except I would substitute feta cheese for the blue

cheese because I'm a feta fanatic. Which leads me to my favorite salad... the

Greek salad. When I went to Greece I paid careful attention to how they made

them and I try to be authentic as possible, except there mostly they don't even

use lettuce in it and just olive oil for the dressing, whereas I love balsamic.

So, I make it (for one person) with lettuce, half a green pepper diced, about

1/4 red onion cut into pieces, 1 tomato diced, 1/2 a cucumber chopped, a few

dashes of oregano on top, a few kalamata olives, as much feta cheese as I'd

like, and balsamic vinegar and a bit of olive oil as the dressing. Mmm so

delicious.

Hi Jackie,

This sounds good & I will try it. Are kalamata olives very much different than

black olives?

thanks
