For just me, I use 1/2 baby spinach, 1/2 lettuce, 1-2 roma tomatoes, sliced, 1/4 of a small red onion, cucumber slices, quartered, kalamata olives, lots of feta, and a homemade dressing, the recipe for which I got at allrecipes.com. Here's the Greek salad dressing recipe (probably not authentic but it's wonderful anyway!) This stuff keeps for a really long time and you don't have to refrigerate it, so it's easy to take to work. I use an empty salad dressing bottle and keep it on my kitchen counter. Absolutely Fabulous Greek Dressing 1 c olive oil 2 1/2 tsp garlic powder 2 1/2 tsp dried oregano 2 1/2 tsp dried basil 1 tsp black pepper (I use only 1/2 tsp, as I don't care for black pepper, but it adds a little bite) 2 tsp salt 2 tsp onion powder 2 tsp dijon mustard 1 c red wine vinegar Mix together olive oil, garlic powder, oregano, basil, pepper, salt, onion powder, mustard.
