I've loved every recipe I've made from this blog, but I wanted to change this a little bit to make it vegan and make it more like my memory of a similar (lost) recipe from a Viennese friend. It was one of the best cakes I've ever had. Don't be deceived by the size. This could very easily serve 6-8, and make everyone very, very happy http://www.nandyala.org/mahanandi/archives/category/fruits/cherries/ My changes: I used 1 15-oz can of water-packed tart cherries (drained), 1/4-cup of canola oil (instead of ghee), no cardamom, used about 1/8-cup ground hazelnuts, and baked it for about an hour. (I'm not familiar with the brand of chocolate used in the original, but I loved it with Green & Black's baking chocolate.) Enjoy!! The cake I've been missing since I lost the recipe 10+ years ago didn't have any, though, so I left it out. It didn't have any hazelnuts either, but I'm a hazelnut fiend (hazelnut nut??) and usually love what they add to vegan baking, so I compromised and cut the amount in half :-) I think you'd really like this one, Donna.
