I have a lovely mother (50's) who is a thoroughly vegetarian, and I'd like to cook for her and explore myself with all the vegetarian foods. Btw, I have a 'Noodle Soup' here that I carefully picked from my collection, and I hope I can share the recipe here with you all. :-> Take Care,Rina Noodle Soup (with chinese greens) Serves 6Calories per serving 220Fat per serving 4.5 g 1/2 vegetable stock1 tbsp chopped root ginger4 cloves garlic, halved2-3 tbsp soy sauce, to taste300 g/ 11 oz egg noodles500 g/ 1 lb 2 oz mixed fresh greens, such as gai lan (Chinese broccoli) and choi sam (Chinese flowering cabbage) 1. Place the stock in a large pan together with the ginger and garlic cloves, and simmer for 30 mins. Add the soy sauce a little at a time, tasting until the flavor reaches the desired richness.2. Cook the egg noodles by soaking them in simmering water for 3-4 mins if fresh, or follow the instructions on the packet if dried. Drain and divide them among the bowls.3. Simmer the greens in the broth for 2-3 mins, then pour over the noodles and serve. Cook's noteThe ginger in this quick and easy soup will warm you up on a cold winter's day.
