Look over the recipes and you will probably understand a lot more about vegetarians. Many still eat eggs and milk, so many good recipes are listed. My husband and I have been a lacto-ovo vegetarians for between 20 - 25 years. This means that our diet includes dairy products and eggs. Our protein comes primarily from beans and legumes. The dairy products and eggs which we eat come from free range pets who have names and are served healthy and chemical free diets. Examples of meals we eat here: breakfast - oatmeal with fruit, whole wheat toast, orange juice and about a half gallon of full city roast Columbian coffee for me lunch - tortilla with refried beans, lettuce, salsa and grated Cheddar cheese dinner - potato soup, grilled cheese sandwiches (we prefer light meals in the evening) A different dinner could be corn, red beans and rice, corn muffins and a small salad. Hope this helps. One thing to remember about going vegetarian is that there are a lot more types of fruits, grains, legumes, beans and other vegetables than there are meats, fowl and fish. I can make different meals for every meal of every day of the year if I wanted to, but there are some things we prefer having a lot more often.
