Guest guest Posted January 23, 2009 Report Share Posted January 23, 2009 Since I didn't measure anything, it may not be a recipe, just an idea! I made this 2 nights ago and it was really good. Carrot salad 2 big huandfulls of baby carrots-grated in food processor 2 large bulbs sunchokes, washed-grated in food processor 3 green onions, sliced white and green parts A big splash of EVOO 1-2 TBsp lemon juice I mixed all this up and let it sit for 15 minutes, then topped individual servings with sunflower seeds. I put a little Aleppo Pepper on mine. Aleppo pepper is a dried pepper from Penzeys that has a little bite but looks like paprika.
