Guest guest Posted February 26, 2009 Report Share Posted February 26, 2009 Hi all, I recently tried this recipe and it came out pretty well.It has great herb flavours and a fresh lemony taste. Thought i'd share it with you. Lemon and Cilantro Soup You will need : Cilantro - 1 bunch Chickpea flour or all purpose flour - 2 tbsps Chopped onion Veggies of your choice - chopped Juice of 1 lemon - freshly squeezed Olive oil - 2-3 tbsps Vegetable stock - preferably homemade or low sodium stock Salt to taste Fresh black pepper Procedure: Chop the cilantro leaves and save the stalks. Heat olive oil in a pan and add chopped onion. Saute till it softens and add chickpea flour and once it starts browning, add veggies. Let the veggies cook slightly and thn add cilantro stalks and half of the chopped cilantro leaves. Add vegetable stock and let it simmer. Add salt and pepper to taste. Once the soup thickens, remove from flame and add freshly squuezed lemon juice and the rest of the cilantro and serve hot. This soup really works in clearing my sinuses. Hope you all like it.
