Guest guest Posted May 20, 2009 Report Share Posted May 20, 2009 I heard a version of this on a cooking show and think it sounds great, going to make it when those summer tomatoes are ripe-guacamole as a meal! Ingredients (for 2-4 servings) 1T olive oil juice of 1 lemon 2 ripe avocados 1-2 ripe tomatoes 1/4 chopped red onion soaked in ice water for 5 minutes chopped cilantro (adjust for taste) Combine oil, juice, drained/dried off onion, and cilantro Slice avocados and tomatoes, stack and drizzle with dressing mixture, salt as needed. Guest guest Posted May 21, 2009 Report Share Posted May 21, 2009 This is common practice in Chile, and I think sometimes they soak it in salt water, though I think the point is soaking it in water. My mom claims the purpose is to get out some of the biting quality of the onion, so it's less...what's the word.. bitter? or sharp?
