My Dad loves this recipe. Hope you enjoy it. I make my life easire by using

instant rice and canned beans and it tastes just as good!

Ingredients

2cans Goya beans (Red n black are yummy) drained and rinsed

2pkg instant white rice, already cooked

1/2 cup evoo

1/4 cup balsamic vinegar

1/2 green, red bell diced

1/2 red onion diced

1 small can corn drained

Special spice mix (I make a lot of this and just keep in my cupboard ( garlic

powder, ground pepper, ground paprika) to taste.

Mix all ingredients very well in a glass bowl and serve either warm, room temp

or cold!
