Mushrooms 2Tbsp oil; butter or other fat/substitute 4 eggs 1-2 Tbsp clotted cream http://en.wikipedia.org/wiki/Clotted_cream Chopped parsley for garnish Salt and pepper Stir fry the cleaned and sliced/chopped mushrooms with the fat and seasoned with pepper only until most of the fat has decreased. Salt after the mushrooms have cooked and adjust the freshly ground pepper as well at this stage. Work the room temperature egg into the clotted cream and pour over the mushrooms stirring `till the eggs have started clotting, not cooking. Garnish with parsley and serve warm! I love mushrooms and it works well with shiitake mushrooms as well. It`s a hearty starter or main! Hello All, Love vegetarian dishes and tried many but as I live in Japan, miss many that I`ve had growing up and hate searching and finding many that use things from bottles or cans. From scratch seems to be the best way and there are lots of new dishes I find here in Japan but I still do get homesick for a different kind of taste. The above is one of my favorites and hope some of you might enjoy it too. It`s a typical Hungarian recipe ad very often-in summer/autumn-the cream is skipped altogether! Now, I have to say that vegetarian and vegetable dishes are interchangeable for me as I m not a strictly vegetarian and neither is my family but still enjoy them.
