Chilies Rellenos Casserole

Hi Gang!

I found this recipe from 2005 (can you believe it) that I never tried

until now!

Being in this group has finally given me the courage to try cooking,

so thank you all for that!

 

It is from www.savingdinner.com which is not that great of a web site

b/c they charge you for recipes (unbelieveable!) but you can sign up

for a weeks worth of sample menu's with a shopping list, for free.

 

Anyway here it is and it turned out great! My hubby ate 4 huge

servings. (which means a lot b/c he is not a vegetarian)

 

Chilies Rellenos Casserole

 

1 medium onion, chopped 2 tsp cumin

1 tsp oregano 1 TBS garlic powder

2 cans green chilies (whole) 1 cup corn, frozen

1/3 cup flour 1 1/3 cups milk

1/8 tsp hot sauce 2 eggs, lightly beaten

salt & pepper to taste 2 egg whites

1 cup low-fat cheddar cheese, shredded

1 can vegetarian refried beans (I used black beans mashed)

 

Arrange half of green chilies, w/ the onion in a 11x7 baking dish,

lightly greased. Top w/ half the cheese. Spoon beans in mounds over

top and spread gently, leaving a 1/4 inch border around the edge of

dish. Top w/ corn. Arrange remaining chilies over corn, top w/

remaining cheese. Set aside. Combine flour, cumin, oregano, garlic

& salt in a bowl, add milk and hot sauce, stir w/ wire whisk til

blended. Add eggs & egg whites and mix again. Pour mixture over top

of casserole.

 

Bake uncovered at 350 for an hour or til set. Waite five minutes

before you cut and serve.

 

( I also added morningstar crumbles for a little more protein)
