I hope you enjoy it. 1 1/8 cups green lentils 2 1/4 cups water 6 slices white wheat bread, torn or diced into small pieces 3 eggs 1 cup water or vegetable broth 2 tablespoons ketchup 1/2 teaspoon dried basil 1/4 teaspoon garlic powder or minced garlic clove 1 onion, diced 4 oz. can mushrooms, diced 1 celery stalk, diced 1 teaspoon dried parsley 1 tablespoon olive oil 1 packet dry vegetable soup mix(do not add if you use vegetable broth instead of water - in earlier part of ingredient list ) ketchup 1/3 cup dried bread crumbs Directions: 1. Combine lentils and water in a small saucepan. Bring to a boil. Reduce heat, and simmer until tender, about 40 minutes. 2. Preheat oven to 400 degrees F (205 degrees C). Grease a 9x5 inch loaf pan. 3. In a large bowl, mix together 2 cups cooked lentils, bread, eggs, water, ketchup, basil, garlic powder, onion, mushrooms, celery, parsley, olive oil, and dry soup mix. Line your loaf pan with parchment paper. Spread into prepared pan. Cover with a layer of ketchup. 4. Bake for 40 - 50 minutes. Sprinkle top with dry bread crumbs, and continue baking another 10 minutes. Let sit for 20 -30 minutes before serving. This will help it hold together and not fall apart. Invert onto a serving plate and slice to serve. *Tip - you can sauté the onion, garlic, mushrooms and celery in the olive oil, prior to mixing into the rest of the ingredients. I prefer doing this.
