canned veggies we like

I agree completely!  For me, canned STEWED tomatoes are my kind of " convenience

food " .  I like a can of them warmed up and with bread (any kind of bread) added

with a little pinch of sugar or honey, maybe some extra herbs added (basil,

thyme, parsley).  The stewed tomatoes already have onions and celery and (I

think) some garlic already in the can. 

 

I also like to put a can of stewed tomatoes in the blender and then add a bit of

spicier salsa to make my own blend of milder salsa or chili-flavored sauce to

cook with rice or any kind of beans, etc., or to dip tortilla chips.  I can

blend with (the canned tomatoes) with some tomato paste, more garlic and onions,

some  mushrooms (if I have them) and several herbs--to make pasta sauce. I

always like to keep several cans of stewed tomatoes and a few cans of tomato

paste on the shelves of my pantry--I can pull out a quick meal in a hurry that

way, no matter what else is going on.

 

On the other hand, I LOVE " jarred " artichoke hearts!  I have never been very

successful at steaming (or however it's supposed to be cooked) the fresh

artichokes. I'm glad there are those canned foods out there for those of us who

use them and like them. Sometimes they aren't ideal, but it's nice to have them

available.

....canned tomatoes are awesome! canned potatoes are good, canned wax beans,

yum, and all canned beans like kidney, black etc are great and time savers.

i don't like canned or jarred artichokes though, they have to be fresh.

i always add spices, like Italian seasoning, roasted garlic, onion etc.
