Guest guest Posted May 5, 2009 Report Share Posted May 5, 2009 Made this for cinco to go with some chili Southwestern Zucchini Flat Bread 1 cup flour 1 teaspoon salt 1/2 teaspoon ground pepper 1 teaspoon baking powder 2 egg whites 1 cup shredded zucchini 1/4 cup plain yogurt or sour cream 1 jalapeno pepper, diced 2 tablespoons grated Parmesan cheese In a large bowl mix together the flour, salt, pepper and baking powder. In another bowl, beat the egg whites until light peaks form. To the flour mixture add zucchini, yogurt, jalapeno and cheese. Fold in the egg whites.
