Guest guest Posted February 10, 2009 Report Share Posted February 10, 2009 wow, talk about cheap, quick and easy...this was right up my alley! bean and rice burritoes; in a sauce pan mix: 2 cups tomato sauce 3 cups water 3 tablespoons of chili powder 4 tablespoons of corn starch 1/2 teaspoon of onion powder 1/4 teaspoon of garlic powder mix and simmer till thickens 3 cups of canned pinto beans, mashed 2 cups cooked brown rice 1 cup sliced green onions(sauteed in oil... or not!) 10 or so whole wheat tortilla shells after sauce thickens, put a cup of sauce into bottem of casserole dish. lay out tortillas and spoon into the center of each one some beans, some rice and little of the onions. roll up and place seam side down into dish. pour rest of sauce over top. cover and bake at 305 for halk an hour! doens't get much easier than that! i think i am getting the hang of this vegetarian cooking thing. I added chick peas to the recipe, and used tofu instead of ricotta. It was delish. You may want to check it out.
