Easy Black Bean Lasagna

1 15 oz. can black beans

28 oz can tomatoes undrained

3/4 cup chopped onions

1/2 cup chopped green bell pepper

1/2 cup salsa

1 tsp chili powder

1/2 tsp cumin

1 cup light ricotta

1/8 tsp garlic powder

1 egg or egg substitute

10 uncooked lasagna noodles

6 oz shredded mozz. cheese

 

Heat oven to 350 and spray 13x9 dish with baking spray.

 

In large bowl mash beans slightly. Stir in tomatoes, onions, bell pepper, salsa,

chili powder, cumin and mix well.

 

In small bowl combine ricotta, garlic powder and egg and blend well.

 

Spread 1 cup of tomato mix. over bottom of dish. Top with half of noodles. Top

with half of tomato mixture. Spoon ricota mixture over top and spread carefully.

Top with half of cheese and then with remaining noodles, tomato mixture and

cheese. Cover tightly with spray coated foil. Bake at 350 for 45 min. Uncover

and let stand 15 min. Serves 10

 

Calories: 260 Total fat is 9g. Sat. fat is 5 g. Cholesterol is 45mg

sodium is 410 mg, Carbs are 30g, Fiber is 4 g. Sugars is 5g. Protein is 14g.
