I like to saute them in a little olive oil with onions and garlic. They are good with radish tops. Have fun. Guest guest Posted March 4, 2009 Report Share Posted March 4, 2009 Deanna, you're in for a treat. Beet greens are my very favorite of all the leafy things, flavorful and slightly sweet. Cut the green off about half inch above the beets. Wash them well to get all the sand/grit out of them, shake them dry in a towel or in the salad spinner, roll them all together into a big sausage shape and then cut crossway to get shreds, or diagonally (alternate the angle of the cut) to get shorter chunks. Heat a little olive oil and briefly saute a couple chopped cloves of garlic, add the beet greens and stir to distribute the oil, then lower the heat and cover the pan. Cook just til the greens are soft but still a lovely green, remove from heat and add a splash of balsamic vinegar, salt and pepper, and serve immediately. irene, wishing she'd planted move over-wintering beets... > I just bought a beautiful bunch of organic beets and they have the > prettiest tops. Guest guest Posted March 4, 2009 Report Share Posted March 4, 2009 Beet greens are the same plant as chard. I've always found them rather bland but their varieties grow well and are nutritious. Wilt them in a pan with some savory, herby liquid and how can you go wrong? Chopped garlic, basil, rosemary, balsamic or apple cider vinegar + water or maybe some wine.
