Check out the following folders: Beans & Legumes (as main ingredient) Hummus Recipes Substitutes for meat , fish & dairy...all non-meat patties > Not-cow I like black beans myself. Cooking with them you don't miss the meat. Also, you can do things like make chili and use one of the soy hamburger substitutes (like Boca ground crumbles, found in the freezer section of larger grocery stores) instead of ground beef. You'll never miss the meat there either. Visit your bookstore or library and flip through the vegetarian cookbooks. You'll know immediately which recipes are attractive to you. And watch the posts on this list. Lots of great recipes being posted all the time. Happy New Year!
