Guest guest Posted June 21, 2009 Report Share Posted June 21, 2009 Nut Ice Box Cookies with a Hint of Orange 1 cup room temp. butter or margarine (2 sticks) 1/2 cup light ot dark brown sugar, firmly packed 1/2 cup granulated sugar 1 large egg 2 teaspoons grated orange peel 3 cups flour 1/2 teaspoon baking soda 1/2 teaspoon salt 1/2 cup walnuts or pecans, finely minced Pinch of cardamom if you have it Cream butter and sugars. Add egg and beat until fluffy. Stir in orange peel. In a medium bowl mix flour, with baking soda, salt and nuts. Add to butter mixture and very mix well. Divide dough in half and shape each into a roll 7 inches long and 2 1/2 inches in diameter. Wrap in waxed paper and chill until firm or freeze and use later. Cut into slices about 1/4-inch thick. Bake on greased cookie sheets in a 375 degree oven for about 10-12 minutes or until edges are lightly browned. Remove and cool on rack.
