I love big round slices of eggplant grilled also the whole pineapple and porti

mushrooms too.

i just got a charcoal grill and I love cooking outside. i love the

 

scents and the sizzle and eating of course.

 

You can take just about any veggie and marinade it, i use either Italian

 

dressing mixed with garlic powder, or ranch dressing mixed with olive

 

oil and garlic powder for marinade, and you can grill them. Any veggie

 

will do.

 

i am experimenting and learning with different types of woods like

 

mesquite and hickory. make peanut sauce with a can of coconut milk and

 

like 5 or so tablespoons of peanut butter. I put the cast iron pan on

 

the other side of the grill from the veggies, add a tablespoon or two of

 

butter, melt the 5 tablespoons or so of peanut butter in the butter, and

 

add a can of coconut milk. heat until thickened a bit. Serve with the

 

grilled veggies for dipping, yum!!

 

i am going to try grilling leftover lentil loaf. i know it will break

 

apart a little, so i will use foil. i wonder how that will be in the

 

peanut sauce, hmmm, will let ya know.

oh me too, love that eggplant. i keep wanting to do the pineapple but

every time i have the money, the pineapple choices are bad, and then

when i don't have the money .... yeah, you know.

The portabellos, omg, marinate them and grill, then put in a hamburger

bun with all the fixin's, yum!

LOL

what do you coat them with again if anything?

And think lengthwise slices of potato and zukes. I can do these on my beloved

George Foreman grill too. That man is as good at cooking as he was at boxing,

my hero lol
