T.C.'s Super Salad

Amount Measure Ingredient -- Preparation Method

2 pounds tomatoes -- (2 to 3)

4 medium or lg. avocados (or 1lb chopped or ground nuts or

seeds)

4 stalks celery

4 large red (or green) bell peppers

2 pounds bok choy stalks and greens

1 grapefruit -- optional

 

Dice the tomatoes, celery and the bell peppers.

 

Quarter, peel and dice the avocados

 

Cut up the bok choy

 

Place all ingredients in a bowl and mix together

 

Optional: Squeeze the juice from the grapefruit and use for dressing
