Miso is red brownish to golden brown in color and tastes extremely salty and tangy on its own. While the most common use of miso is in Japanese-style miso soup recipes, miso also adds a unique burst of flavor to salad dressings, sauces and marinades, baked tofu, or vegetable dishes. Besides soy, miso can also be made from barley, rice, or other grains. These types of miso will vary slightly in color and taste, though can be used interchangeably in recipes. In general, the darker the color of the miso, the stronger the taste, so if you find the taste unpleasant, look for white or yellow miso rather than brown or barley miso. It is a good source of Vit B 12, especially for vegans. Look for miso in Asian grocery stores or the refrigerator section of your local health food store. Don't feel bad John, I've been a vegetarian my whole life and had never heard of this product before this group introduced my to it. I found it in the refrigerator in an asian market. I love it to use it to flavor broths for soups and to make a nice hot broth to drink most days. Just 1 Tbsp stirred into a 16 oz glass of hot water, make a wonderful drink and it full nutrition. I recommend the golden colored Miso, especially for someone trying it for the first time.
