Guest guest Posted December 11, 2008 Report Share Posted December 11, 2008 I mentioned some time ago that I was going to try to cook in bulk and freeze in individual servings, specifically with grains and beans, thanks to thos who suggested it During an average week, I eat at least three 1/2 cup servings per day of some kind of grain, and by the end of the week, I work my way through everything in my pantry, so instead of cooking just enough for a day or two, i cooked large amounts this time, and put in individual servings in the freezers.... and this past week ALL of them have turned out just fine, defrost in microwave for 5 minutes, then 1 minute on high, add my spices or whatever and eat. Even the rice comes out just fine, although the lentils and anasazi beans did get a little mushy, but who cares...they were edible This morning I had 'fresh' quinoa with some cinn and pears and some leftover cabbage, for lunch i had some of my frozen rye and lentils, a leftover spring roll and two cookies (gasp) and for dinner, just some plain millet from the freezer and some steamed veggies and an apple... I wish I had thought to freeze cooked grains long ago - it works great!
