The people are so friendly. My favorite vegetarian restaurant in Jackson, MS. is Rainbow Coop. They serve delicious vegan food. hmmmmm Nothing quite like it - even in Chicago. Here in Hattiesburg, I loved when New Yokel had their big Sat breakfast and still LOVE their salad bar. And @ the Caliente grille the bean & veggie burrito or quesidilla. And the chef-made veggie burger @ Brownstones. And the chef-made black bean burger @ Sidelines is good, too. In Atlanta (and Chicago) I have a compulsion to eat @ Soul vegetarian. It is a nice little town, isn't it? Yeah we LOVE hign noon cafe @ rainbow, too. (It is very hit or miss whether we make it to Jackson around noon and can catch it b4 it closes...Way more misses than hits.) What are some of your fave spots in chi-town? I like Ethiopian Diamond Restaurant ( it has won awards for its vegetarian cooking ), Lake Side Cafe, and Brother Tim's for vegetarian food. I also enjoy going to Devon and getting authentic Indian food. There are always vegetarian options, but it is usually very spicy!
