Guest guest Posted June 23, 2009 Report Share Posted June 23, 2009 I've made strawberry soy " ice cream " using Silk Soy Creamer, fresh strawberries, and organic evaporated cane juice. I just blended it all together and put into my electric ice cream maker. It was very good, I thought. For a lower fat version, you could try just using soy milk, or I've heard of some healthier things you can add to the mixture to make it seem more creamy without added fat, but I can't think of them offhand...I'd have to go looking for that info. I'll have to look for it in our local stores. Recently I've switched to using only low-glycemic sweeteners, as unrefined as possible, so I'd probably use agave or brown rice syrup. I had a great coconut milk frozen dessert that a friend had gotten at Trader Joe's and I wanted to try and make something like that at home. It was really good.
