I only began using coconut oil for the first time about a week ago, so any effects are still yet to be determined. You may find some interesting explanations of the conflicting information (it confused me, too) here: http://www.coconutresearchcenter.org/index.htm or here: http://coconutoil.com/index.html From what I understand, and, again, I'm no expert, there is a huge difference between processed hydrogenated coconut oil that is usually the coconut oil sold in stores versus the extra virgin, unrefined, non-hydrogenated coconut oil that is much more difficult to find on store shelves. Apparently, much of the research that has been conducted over the years in regards to the effect of the coconut oil on health was conducted on the hydrogenated version. From what I've read, no one seems to disagree that the hydrogenated version is bad for health. Yet, what I've read in regards to the extra-virgin non-hydrogenated version of coconut oil seems to be positive. Allegedly, the extra-virgin version has properties that are anti-fungal, anti-microbial, etc. Of course, you have to look hard to find the research and the articles that aren't connected to someone wanting to sell a product--which makes it even more confusing.
