That is the protein that binds the cheese and makes it melty. Unfortunately this is also the protein that makes many people feel ill. I like to make a cheesy sauce for my vegetables and to dip stuff in. It's pretty easy to make. I am sure there are many recipes like this but here's the link to my favorite. http://caloriecount.about.com/uncheez-sauce-recipe-r164595 I also sprinkle nutritional yeast on things when i want a cheesy flavor. I have not found a commercial cheese I like but I am sure they are out there. I live in a rural area so there aren't many stores that carry this sort of specialty item. Good luck with this!
