Hi Steph,

WEell I had tears when I reposted it.  my mom is 86 and in her final stages of

dementia.  This is her old tried and true recipe.  Hard to read her writing but

so far I have done well with it.  Every old recipe I have made has come out

perfect.

I will post a picture of my Sunday baking from her old recipes.

Enjoy it's good.

I was almost in tears when I saw this recipe. My Grandma used to make regular

potato fudge and when she passed this was one recipe I requested. Since I have

lost the recipe and have not found one on-line that compared. I look forward to

trying it and seeing if it is like my Grandma's

A very old recipe of my Mom's, it's delicious!

" Chocolate Tater Fudge "

2 medium potatoes (about 10 ounces) peeled and cut into chunks

1 to 2 Tablespoons milk

1 6 ounce package semi sweet chocolate morsels (1 cup)

1 cup peanut butter

1 tsp. vanilla

3 cups powdered sugar

1 cup finely chopped peanuts

In a large saucepan cook potatoes covered in boiling water for 20

mins. or until very tender.

Drain and mash with just enough of the milk to make fluffy and set

aside. (Should be 2/3 cup of potatoes)

In a heavy 3 quart saucepan heat chocolate pieces over very, very

low heat until melted, stirring constantly. Rremove from heat and

stir in potatoes, peanut butter and vanilla. Stir in powdered

sugar. Stir half the peanuts into mixture. Turn mixture into a 9X9

baking pan. Press down evenly. Sprinkle with remaining peanuts,

press them down lightly into candy. Cover and chill until firm.

Makes about 2 1/4 lbs. of candy.

Oh, these are from your mom's recipes - how special. Is the one at the upper

right the potato cookie?

Those are her snickerdoodle recipe and they are rolled in sugar, cinnamom and

cardamom.

The left are biscotti and the front are the peanut butter chocolate kiss

cookies.

Found Snickerdoodles with added cardamom and Chocolate Kiss Peanut Blossoms in

the Cookie File. Am resisting the urge to make them now. Are these your

Grandma's? Didn't find any biscotti recipes in cookies or bars files. Where are

they hiding :>)

Is the snickerdoodle recipe secret?  I would LOVE to get my hands on one that is

soft on the inside and a bit of a crunch to the outside.

Cassie

P.S. Disregard my previous post :)
